
Last night after many hours of parent/teacher conferences some co-workers and I went to Cafe Blossom... a vegan restaurant on 82 and Columbus Ave. I was not sure a vegan restaurant would appeal to me... but it was amazing. I wish I took pictures but I didn't have my camera. I had potato leek soup and a large salad that had grilled pear, beets, almonds, walnuts, spring greens, and a cranberry vinaigrette. We all shared sweet potato fries... delicious.
Well it is the weekend! I have been staying at my parents apartment taking care of their dog and I am missing my doggies A LOT. But I got to see them today when Josh and our dogs plus my moms dog went to Joe's to get iced lattes. Dogs out numbered people by 1! People must think we are crazy walking through the streets with 3 dogs... 1 small, 1 medium and 1 large. Anyway, I bought kale from the Farmer's Market. I got home and ripped it into pieces making sure I didn't have the thick stalks in my bowl. I then tossed the pieces with olive oil, salt and apple cider vinegar. When it is done it is crispy... like chips, but healthy! Great snack!
Roasted Kale
Kale, as much as you want, torn into pieces, no stems (they are too chewy)
2 tablespoons of olive oil
1 tablespoon of apple cider vinegar
Cook at 350 for 10-15 minutes. Then flip the pieces and cook for about another 20 minutes... I would check on it every 10 minutes... take out when it feels crispy.
